ISO: Mashed Potatoes?

I am hosting Thanksgiving at my house again this year and I am a very disorganized person. By the time my mashed potatoes are finished the turkey and everything else is cold. This only seems to happen with the potatoes. Does anyone know if I can peel and cut-up the potatoes the day before or the morning of, and keep them in a pot of water in the refrigerator until I am ready to boil them. I don't know if soaking them in the water for a long time might make them soggy before, during, or after cooking. I don't want to have to make "make ahead" potatoes.
