Recipe: No-Peek Skillet Chicken and Noodles (using tomatoes and onion soup mix)
Main Dishes - Chicken, PoultryNO-PEEK SKILLET CHICKEN AND NOODLES
2 tablespoons olive or vegetable oil
1 chicken (2 1/2 to 3 pounds), cut into serving pieces (with or without skin)
1 (14 1/2 ounce) can whole peeled tomatoes, undrained and chopped
1/2 cup sliced fresh or drained canned mushrooms
1 clove garlic, minced
1 envelope Lipton Recipe Secrets Onion Soup Mix*
Hot cooked noodles (for serving)
Chopped fresh parsley (optional, for garnish)
In 12-inch skillet, heat oil over medium-high heat and brown chicken; drain.
Stir in tomatoes, mushrooms and garlic combined with (dry) onion soup mix. Reduce heat to low and simmer covered 45 minutes or until chicken is done.
Serve over hot noodles and sprinkle, if desired, with chopped fresh parsley.
*Also terrific with Lipton Recipe Secrets Italian Herb with Tomato, Savory Herb with Garlic, Golden Herb with Lemon or Beefy Onion Soup Mix.
Makes about 6 servings
