Recipe(tried): Surprise Pie (using Ritz crackers)

Misc.
My mom always makes this pie with walnuts (which is weird considering we are in pecan country).

SURPRISE PIE

3 egg whites
3/4 cup sugar
1/2 tsp baking powder
1 tsp vanilla
1 cup +/- nuts, chopped
2 wax paper sleeves of Ritz crackers, crushed.

Preheat oven to 350 degrees F.

Beat egg whites till stiff gradually adding sugar and baking powder. Add vanilla. Stir in chopped nuts and crackers.

Bake in greased pie pan 30 minutes.

Serve with whipped cream or ice cream. Good with fresh fruit also.
