Recipe: Michael Watchorn's Grilled Oysters with Garlic-Parsley Butter and Hot Sauce

2 tablespoons finely chopped parsley, plus about 24 whole leaves
4 tablespoons unsalted butter, softened
1 teaspoon minced garlic
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1 dozen large oysters, shucked, bottom shells reserved
Chipotle hot sauce to taste
Preheat a charcoal or gas grill; the fire should be moderately hot and the rack about 4 inches from the heat source.
Puree the chopped parsley and the next 4 ingredients in a food processor or mix in a small bowl until combined.
WHEN YOU'RE READY TO COOK:
Put each oyster on a shell. Put them on the grill (shell-side down, of course), top each one with a teaspoon of the butter mixture and a leaf or two of the remaining parsley, and cover the grill.
Makes 12 oysters
