Dearest Sheryl: How interesting. I am almost sure that in Mexican

cooking they add cumin & oregano to the SOFRITO. That is similar to us that we add almost always garlic & crushed oregano to our ADOBOS. That makes a difference in cooking autoctonous to different countries. Just Add a pinch of cumin, some (to taste) chili powder & some crushed oregano to the rice & substitute chopped or sliced and sauteed chorizos instead of the chopped ham. I you can, add some annato (achiote) oil for coloring instead of the envelope of Saz n con Culantro y Achiote. Then you will get an authentic Mexican flavor.
