Recipe: So-Special Beef (rib roast, using ham and condensed soup for gravy)

4-pound rolled beef rib roast
FOR THE GRAVY:
1/2 cup cooked ham strips
2 medium cloves garlic, minced
1 (1O 3/4 ounce) can Campbell's Condensed Golden Mushroom Soup, undiluted
1/3 cup water
1 teaspoon capers
In large roasting pan, place meat fat-side up. Roast at 325 degrees F for 2 hours 20 minutes or until desired doneness. Remove meat from pan; pour off excess fat, saving drippings.
TO MAKE THE GRAVY:
On top of range, in roasting pan, brown ham with garlic in drippings. Add soup; stir to loosen browned bits. Add water and capers. Heat; stir occasionally. After slicing meat, add meat juices to gravy.
Makes 6 servings
