Tonight was Italian. Had Italian Beef Sandwiches with Fettuccine Alfredo (from a box) and a sald of grape tomatoes, avocado, shredde carrots tossed with Italian dressing.* Exported from MasterCook *

Italian Beef Sandwiches

ITALIAN BEEF SANDWICHES

1 large onion, quartered
1/4c. vinegar
3 cloves garlic, minced
1 (15 oz.) jar roasted bell pepper, undrained
1 tsp. Italian seasoning
pinch of salt
1 (10-1/2 oz) can beef broth
2 soup cans water
3 to 4 lb. rump roast

Preheat oven to 350 degrees. Mix all ingredients, except roast in a deep roasting pan or Dutch oven. Set roast into the sauce, cover and bake 3 hours. Remove roast from the pan to cool, leaving juices in pan. Refrigerate several hours or overnight. Slice the cooled beef thinly, skim fat from juices and return to roasting pan. Return meat to pan with juices and bring to a boil. Reduce heat and simmer 15 minutes. Serve on warmed French rolls with strained sauce in individual bowls for dipping. Makes 6 servings.
