RAINFOREST CAFE BASIL-SEARED SALMON
FOR THE SALMON:
7oz. fresh or frozen salmon
1/4 tsp. kosher salt
1/8 tsp. fresh cracked black pepper
2 whole basil leaves
1 oz. olive oil
FOR THE SIDES:
1 oz. extra virgin olive oil
1 portion fresh mixed vegetables
1/4 tsp. chopped garlic
1 serving orzo pasta, cooked
3 oz. lemon and lobster broth
Pinch salt and black pepper
1 Tbsp. grated Parmesan cheese
Season each side of salmon with kosher salt and fresh cracked black pepper. Lay 2 basil leaves over presentation side. Make sure they are not too large and the salmon is still exposed on top.
Heat a nonstick pan and add olive oil.
Gently place fish presentation side down into the hot oil. Sear for approximately 2 minutes, then flip and sear the other side for 2 minutes.
Place on a platter and cook in oven at 450 degrees F for 4 minutes.
Discard oil from the saute pan, add extra virgin olive oil to pan and heat. Add vegetables and cook until veggies are seared and almost completely cooked. Turn down to medium-high heat.
Add garlic, orzo pasta and lemon and lobster broth. Reduce broth by 50%. Add chopped basil, salt and pepper, and Parmesan cheese.
TO SERVE:
Place Orzo and vegetables in brother in center of the bowl. Place salmon filet and drizzle with basil oil.
