A 7up cake is a delicious get away from the traditional pound cake. I hope everyone likes it.
3 cups sugar
3 sticks (1 1/2 cup) butter (softened)
3 cups flour
3/4 cup 7up (lemon-lime soda)
5 eggs
2 tablespoons lemon flavoring
Orange Glaze (optional):
powdered sugar
orange juice
Preheat oven at 350 degrees. This cake works best in a bundt pan. Spray the pan with Pam or any nonstick cooking spray.
On medium speed of electric mixer, combine 1 cup sugar with 1 stick of butter until both are creamy; repeat unitl all sugar and butter is used.
Then beat in 1 cup flour and 1/4 cup 7up at a time until all flour and 7up is used.
Beat in the eggs one at a time until the batter is completely smooth.
Last add 2 tbsp lemon flavoring. Blend until smooth. Pour into prepared pan.
Bake until toothpick comes out clean. Turn out of pan and place on a rack to cool.
You can serve the cake plain or make a orange glaze by combining powdered sugar with enough orange juice until the consistency to pour over the cake. Once glazed sit it in the refrigerator to chill.
