Recipe: Skinnytaste Air Fryer or Oven Crispy Salmon Nuggets for 2 (or whitefish)

"These bite-size panko-crusted salmon nuggets just explode with flavor. You get the crunch from the crispy coating and a juicy center with every bite!"

12 ounces skinless wild salmon fillet, 1 1/2-inches thick, or arctic char or steelhead trout
2 tablespoons light mayonnaise
1/2 teaspoon lemon pepper or garlic pepper seasoning*
1/4 teaspoon sweet paprika
1/2 cup seasoned panko bread crumbs, regular or gluten-free Lemon wedges, for serving (optional)
Cut the salmon into sixteen 1 1/2-inch cubes and season with 1/4 teaspoon kosher salt.
In a medium bowl, combine the mayonnaise, lemon pepper, and paprika. Place the panko in a separate shallow bowl. Add the salmon to the mayonnaise mixture and toss to coat, then transfer to the panko and toss again to coat.
Place the salmon on a work surface and spray the top sides with olive oil.
Spray an air fryer basket with olive oil. Add the salmon to the basket in a single layer, oiled side down. Spray the other side of the salmon with more oil and cook at 400 degrees F until golden and crisp, 6 to 7 minutes, flipping halfway through.
Transfer the salmon nuggets to a plate and serve with lemon wedges, if desired.
*If you don't have lemon pepper on hand, use a mixture of freshly ground black pepper and grated lemon zest.
Also, if you want to make a simple tartar sauce, combine 1/4 cup fat-free Greek yogurt, 1/4 cup light mayonnaise, 2 tablespoons chopped dill pickles, juice of 1/2 lemon, and chopped fresh dill. Mix and serve with the salmon.
NO AIR FRYER? NO PROBLEM!
Preheat the oven to 425 degrees F. Arrange the breaded salmon nuggets on a baking sheet and spray with oil. Bake until the salmon nuggets are golden and crisp, 8 to 10 minutes; no need to flip.
