Recipe(tried): A Great Sandwich !

Sandwiches
Hi Friends, Since being back from our trip I have not done any cooking worth sharing-I hope to get back in the swing soon. However, before I forget, I wanted to share a great sandwich that I enjoyed in a restaurant while travelling (DH enjoyed it too-it was large). I plan to make them at home sometime soon.

2 slices of toasted rye bread
One slice of toast was topped with:
1. layer of creamed spinach
2. a grilled chicken breast
3. a generous slice of cheese(Monterey Jack I think)
4. 2 slices of peppered thick sliced bacon
5. lettuce and tomato
6. second slice of toast

All the ingredients (except lettuce and tomato, of course) were warm and the cheese slightly melted.

YUM, YUM, YUM

I like creamed spinach but never thought of putting it on a sandwich. This is a real knife and fork sandwich.
