Well, tomorrow Mom and I leave for one of our roadtrips....destination: The Lakewood Antiques and Market Fairgrounds outside of Atlanta, Georgia. We have been planning this little trip for about 1 month now. And it was "signed, sealed and delivered" once I saw an article depicting the market in this month's issue of Country Living. Oh, what a wonderfully enticing picture of all the treasures they have to offer!! I told Mama, "get your walking shoes ready, honey 'cause we are going a-hunting"!!

We plan to stop in Juliette, Georgia to have lunch at the Whistle Stop Cafe. This is the little town that they filmed "Fried Green Tomatoes". I am in the mood for trying out their fried green tomatoes and any other Southern fare they offer...Juliette is only about 8 miles south off the interstate. Maybe I will get lucky and they will have a cookbook...

We plan to leave at 5AM Friday morning mainly because it's 8 hours driving and I don't like pulling into uncharted territory late in the day. I need to see where I am going folks!!

Today has started fairly early for me. Since my DH is an avid tennis fan and has been following the U.S. Open, I need to leave him well-stocked and happy for the weekend....
This is the note I will leave on the fridge:

To My Dear Husband,

A roasted turkey breast for sandwiches,
And a chipotle dressing to give it some zing,
Some mango chutney just in case....
With assorted sandwich rolls to fill them in.

There's a bowl of zesty pasta salad too,
And lots of smoked gouda cheese,
You asked for a classic southern pound cake...
Oh, and some chocolate chip cookies please!
And away we go, see you on Monday!!!!

Roasted Turkey Breast for Sandwiches

1 turkey breast, up to 8 lbs.
1/2 c. butter
sprinkling of:
italian seasonings
Key West Seasoning by McCormick
garlic powder
paprika
Rub softened butter all over and sprinkle seasonings all over and inside too. Place on roasting pan and roast at 325 for one hour and 20 minutes or until tender.

Take out and let rest for 20 minutes. Wrap in foil and let cool completely before refrigerating.

A boring turkey sandwich? Hardly!! He can try any of these combinations to spruce his sandwich up:

whole wheat rolls with zesty dijon mustard and smoked gouda...

kaiser rolls with cream cheese and mango chutney...

challah bread with tomatoes, lettuce and spicy chipotle dressing....

Chipotle Mayonnaise
1 cup mayonnaise
1 tablespoon fresh lime juice
2 chipotle chilies in adobo sauce -- pureed and strained
1 teaspoon ground cumin
salt and fresh ground pepper -- to taste

Combine all ingredients and keep covered in refrigerator. Keeps for one week covered.

Mango Chutney
2 Cups Red Onion, diced
1/2 Cup Cider Vinegar
3/4 Pound Light Brown Sugar
2 Cups Apple, diced
2 Cups Pear, diced
1 Teaspoon Curry Powder
1 Cup Mango, diced

Place red onion, vinegar and brown sugar in a stainless pot and bring to a simmer. Cook for about 30 minutes.

Add diced apples, pears and curry powder and cook for a further 20 minutes (or until syrupy).

Remove from heat and add Mango. Stir well blending all ingredients. Let cool and store in jar in refrigerator.

Be sure that all fruit is ripe.

Antipasto Pasta Salad
A delicious Italian-style pasta, meat, vegetable and cheese combination with a homemade dressing. It serves a crowd and is great for a picnic, celebrations, and get-togethers as well as a light meal served with bread.
12 servings

1 pound seashell pasta
1/4 pound Genoa salami, chopped
1/4 pound pepperoni sausage, chopped
1/2 pound Asiago cheese, diced
1 (6 ounce) can black olives, drained and chopped
1 6oz. jar of chopped pimientos, drained
1 6 oz. jar of artichokes, drained and chopped coarse
1 red bell pepper, diced
1 green bell pepper, chopped
3 tomatoes, chopped
1 garlic clove, minced very fine
3 scallions, chopped
1 (.7 ounce) package dry Italian-style salad dressing mix
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons dried oregano
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
salt and ground black pepper to taste

Cook the pasta in a large pot of salted boiling water until al dente. Drain, and cool under cold water. In a large bowl, combine the pasta, salami, pepperoni, Asiago cheese, black olives, red bell pepper, green bell pepper, pimientos, artichokes, scallions, garlic and tomatoes. Stir in the envelope of dressing mix. Cover, and refrigerate for at least one hour.

To prepare the dressing, whisk together the olive oil, balsamic vinegar, oregano, parsley, Parmesan cheese, salt and pepper. Just before serving, pour dressing over the salad, and mix well.
Classic Southern Pound Cake
(This is great served with strawberry sauce)

1 1/2 Cup Butter softened at room temp.
3 Cups Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Lemon Extract
1 Tablespoon Fresh Lemon Juice
1 Teaspoon Grated Lemon Rind
6 Eggs
3 Cups All-Purpose Flour
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
1/2 Cup Evaporated Milk

Heat oven to 325 degrees.
Grease and flour 10 inch tube pan.
Beat butter in large mixing bowl until light and fluffy.
Add sugar 1/2 cup at a time, creaming well after each addition.
Stir in vanilla, lemon extract, juice and rind.
Add eggs, one at a time, blending well after each addition.
Sift together flour, baking powder and salt; add to creamed mixture alternately with milk.
Stir thoroughly after each addition.
Pour into prepared pan.
Bake until wooden pick inserted in center comes out clean; about 70 to 80 minutes.
Cool 20 minutes;
remove from pan.

Yields 1 cake

Loaded Monster Chocolate Chip Cookies
makes 48 cookies

1/2 c. butter, softened
1 c. sugar
1 c. plus 2 T. brown sugar
2 t. baking soda
1/4 t. salt
3 eggs
3/4 t. light corn syrup
1/4 t. vanilla
2 c. crunchy peanut butter
4 1/2 c. rolled oats
1 10 oz. bag M & M's
1 c. semi-sweet chocolate chips

Preheat oven to 350.

Combien butter, sugar, brown sugar, baking soda, salt, eggs, corn syrup, vanilla and peanut butter. Mix well. Mix in oats. Stir in M & M's and chocolate chips.

Drop 2 inches apart by heaping tablespoons onto a greased cookie sheet. Bake in center of oven for 10-12 minutes. Transfer to wire rack to cool completely.
