Good Morning Everyone!

Last time I posted I told you about 2 of my very best childhood friends who were visiting their Mom here in Florida. After reviewing the menus and almost going with the
Chicken Piccata, Helen, their Mom, said she had never had never eaten anything Cuban except rice and black beans. Right there and then Barbara and I decided to go with the typical Cuban meal...so the menu tonight will be:

Citrus Infused Spanish Sangria
Avocado, Tomato and Letttuce Salad with Vinaigrette Dressing
Cuban Bread
Arroz Con Pollo Garnished with Petit Pois and Red Pimiento(recipe)
Sweet Fried Plantains (recipe)
Tres Leche Cake with Merengue Topping(recipe)

I am off to the market after this posting to pick up my sweet Mama who makes the BEST Arroz Con Pollo and I will make the Tres Leche. Isn't it fun to cook dishes that friends have never tasted? It will be a wonderful time with old friends that are just like family!
