HERBED JASMINE RICE
2 cups salted water
1 cup jasmine rice, uncooked
2 teaspoons extra-virgin olive oil
1/3 cup chopped mixed fresh herbs (such as thyme, chives, sage or parsley)
Salt and freshly ground black pepper (to taste)
Bring water to boil. Add rice and cook until tender, about 10 to 20 minutes, stirring occasionally. Drain.
Toss rice with olive oil and herbs and season with salt and pepper.
Makes 4 servings
