Recipe(tried): A typical Family dinner! VERY HEALTHY, low in fat and cholesterol, vegetarian!

Have made up a menu of recipes that I have tried.

I absoulutely love cooking, and have been making meals for my family for years now. Hope that I can give some advice to you!

Well anyway, here is a menu I made up. Very family friendly. Any questions- i'd be more than happy to answer!

These recipes are very delicious, Im sure if you made them, you would think so too!

DINNER MENU:
SATURDAY NIGHT FAMILY MEAL

First up, a light refreshing soup to warm everyone up!

MEDITERRANEAN TOMATO SOUP

serves 4 to 5 (I double all quantities shown here for my family, it lasts for ages)

ingrediants:
675g ripe plum toamotes
1 onion
1 celery stick
1 garlic clove
15ml oil (1 tbsp)
500ml chicken stock
15ml tomato puree
50g pasta shapes (any pasta shape will do) I use shells
salt,pepper to taste
parsley to garnish

Method:

place tomatoes, celery, onion and garlic, all chopped in a pan with the oil. Cook covered over a low heat for 40 mins, shaking the pan occasionaly. Vegetables are finished when very very soft.

Spoon the mix into a food processor or blender and process until very smoooth. Press through a seive, then return to the pan.

Stir in the stock, and tomato puree and return to the boil. Add pasta and simmer for about 8 mins, or until pasta has cooked. Add a pinch of salt and pepper.

Serve with a garnish.

Now for the main meal, very simple yet again, but very healthy and tasty!

SPAGHETTI WITH RICH HERBED SAUCE

serves around 5

you will need,

2 cups of chopped mixed herbs... these could include basil, parsley, thyme
2 garlic cloves, crushed
4tbs toasted pine nuts
60ml olive oil
350-400g of fresh pasta
grated parmesan
salt, pepper
basil to garnish

put in the herbs, garlic and half the pine nuts into a food processor. With the machine running, gradually add oil and keep processing. You will form a thick puree.

Cook your spaghetti.

Transfer herb puree into a large warm bowl. Add spaghetti (cooked well) and parmesan. Toss together, sprinkle over the pine nuts and serve with a garnish of basil.

You may want to toss a little butter in to make the pasta smooth, before tossing around with the herbs.

Serve with a salad of your choice.

last but not least, a quick desert!

Refreshing:

FRUDITES WITH GREEK HONEY DIP

serves 5-6

1 cup of greek yoghurt
3tbs clear pure honey
selection of fresh fruit

place yoghurt in a dish, mix in honey. Puree in a blender for 5 mins.

Arange fruit on a platter. Transfer honey mix into another dish and serve with the fruit.

It makes a lovely desert!
