Recipe: A Week at the Cottage - Some Great Ideas for You, Shar

Hi Shar!

When our family goes away for a week I try to come up with menus and meals that are enjoyed by everybody and that can be gotten from the refigerator for a quick bite.

7 Lunches Ideas:

Cold cuts and assorted cheeses for quick sandwiches served alongside a scoop of deli-made potato salad or cole salw and a pickle slice.

Meatloaf sandwiches served with potato chips.

Cold Grated Carrot Salad, Cold Chickpea Salad or Cold Wheatberry Salad for lunches and side dishes at dinner.

Chicken, Pecan and Grape Salad for sandwiches or on lettuce for lunches with crackers

Peanut Butter and Jelly Sandwiches with apples slices.

Fresh Fruit Platter with Fruit Dip

Roasted Chicken Caesar Salad (made with rotisserrie chicken)

Stuffed tomatoes with either Tuna Salad, Crabmeat Salad or Chicken Salad

7 Dinner Ideas:

Meatloaf, Mashed Potatoes and Glazed Carrots

Grilled Chicken, Sweet Potato Baked Fried and Corn

Chili, Cornbread

Baked Lasagna, Salad and bread

Lemon Chicken Cutlets, Rice Pilaf and Fresh Green Beans

Basil-Buttered Salmon, Red Potatoes and Asparagus

Hamburgers, French Fries and Cole Slaw

I would also gave a 9x13 pan of Chocolate Cake, brownies, fresh fruit bowl, and pudding cups available.
