African Beef Stew -- Afrikansk Biffgryta
Serving Size : 4

1 1/2 lb boneless beef
2 large onions
2 carrots
1 cloves garlic -- (1 to 2)
3 tbs peanut butter
1/2 tb tomato pur e
1 bay leaf
1/8 tsp cloves
1/8 tsp ginger
1 dash cayenne
salt and white pepper
1 tb freshly squeezed lemon juice or vinegar
2 cups beef stock -- (2 to 2 1/2)
1 tb peanut butter
2 tbs flour -- (2 to 3)

Finely dice the meat. Peel and dice the onion, slice the carrots and crush the garlic. Heat up the peanut butter and saut meat and vegetables well for a few minutes. Add tomato pur e, spices, lemon juice or vinegar, and stock. Bring to the boil, reduce heat, cover, and let simmer until tender.

Mix peanut butter and flour and stir it into the stew. Let simmer for a few more minutes and check for seasoning. Serve boiled or mashed potatoes with the beef stew. Enjoy!
