Recipe: Chunky Chicken or Turkey Chili

Main Dishes - Chilis, Stews
CHUNKY CHICKEN OR TURKEY CHILI

2 to 3 tablespoons vegetable oil
1 1/2 pounds chicken or turkey, cut in small cubes
1 large white onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 (4 ounce) can chopped green chilies
Salt and pepper to taste
1 teaspoon ground cumin
1 teaspoon dried oregano
1 (14-16 ounce) can Mexican-seasoned stewed tomatoes
1 (16 ounce) can diced tomatoes
1 1/2 cups chicken broth
1 (16 ounce) can white beans, rinsed and drained
2 cups frozen corn (optional)
Fresh lime wedges (for serving)

Heat oil in large sauce pan. Add onion and saute about 5 minutes.

Add chicken or turkey. Brown until meat is no longer pink. Add garlic, green pepper, chilies and seasonings. Stir.

Add tomatoes, broth, beans and corn. Simmer for 5-10 minutes. Adjust seasonings. Serve with fresh lime.

Makes 6-8 servings
