Recipe(tried): Amish Potato Salad (with cooked dressing)

AMISH POTATO SALAD

6 medium potatoes
FOR THE DRESSING:
2 eggs, well beaten
3/4 cup sugar
1 teaspoon corn starch
Salt, to taste
1/4 to 1/2 cup vinegar to taste
1/2 cup cream or evaporated milk
1 teaspoon mustard
3 tablespoon butter, softened
Mayonnaise (as needed for consistency)
FOR THE SALAD:
4 hard cooked eggs, diced
1 small onion, chopped
1 cup celery
1 teaspoon celery seed
1 teaspoon salt

Cook potatoes in their jackets until soft; cool.

To prepare the dressing, mix eggs with sugar, cornstarch and salt to taste. Add vinegar, cream and mustard. Cook until thickened. Remove from heat and beat in butter. Add mayonnaise and mix until smooth. Remove from heat and cool.

To prepare the salad, peel, and dice the cooled potatoes. Mix potatoes gently with the hard cooked eggs, onion, celery, celery and 1 teaspoon salt. Add potato mixture to the cooled dressing, folding gently together.
