RAINBOW TOMATO PLATE AND FRUIT YOGURT
"This colorful salad plate accented with red and yellow tomatoes takes only 5 minutes to assemble."

RAINBOW TOMATO PLATE:
2 small red tomatoes, sliced
2smallyellow tomatoes, sliced
1 medium cucumber, peeled and sliced
1/4 cup pine nuts
6 ounces smoked chicken breast, cut into cubes (about 1 1/4 cups)
2 tablespoons no-sugar added oil (olive or canola) and vinegar dressing
Salt and freshly ground black pepper
Arrange the sliced tomatoes and cucumber in circles on 2 plates, alternating red tomato slices, yellow tomato slices, and cucumber slices. The slices should cover the plate. Sprinkle chicken cubes and pine nuts over tomatoes. Drizzle dressing over the top. Sprinkle with salt and pepper to taste.
Makes 2 servings
Per serving (for the salad): 354 calories, 32.1 g protein, 15.1 g carbohydrates, 13.0 g fat (2.2 saturated), 72 mg cholesterol, 161 mg sodium, 0.9 g fiber
FRUIT YOGURT:
1 cup light fruit yogurt
Divide yogurt between 2 small dessert bowls.
