Recipe: And..Cajun Beans and Rice

Cajun Beans and Rice

Ingredients:

2-15 oz. cans black beans, drained
1 Tbsp olive oil
Cooking spray
3 cloves garlic, minced
1 medium onion, chopped
1 medium carrot, chopped
1/2 green pepper, chopped
1/2 tsp cumin
1/2 tsp coriander
Salt and freshly ground pepper, to taste
1 Tbsp dried parsley
1-14.5 oz. can stewed tomatoes
Rice
Lowfat sour cream or yogurt (optional)

Directions:

Coat a large skillet with cooking spray.
Add olive oil and saut onion and garlic
for 3 minutes. Add carrots and continue to
cook for 3 minutes. Add green pepper and
saut 5 minutes more.

Add spices, tomatoes (with juice), salt
and pepper to taste. Simmer until all
vegetables are tender. Add beans and
warm about 10 minutes to combine all
flavors.

Serve over rice. Garnish with sour
cream or yogurt, if desired. Makes 6 servings.
