Recipe: Another idea to feed a crowd...

A potato bar is another idea. You cand scrub and prepare the potatoes the night before and bake and hold the day of the event. Another poster here uses her crock pot or electric roaster for these occasions.
Extras such as butter pats, sour cream, green onions/chives, broccoli, grated cheese, cheese sauce, chili or taco meat, salsa/verde sauce, crumbled bacon/ham, etc. can be prepared ahead and replenished as needed.
Paper hot dog servers, from Sams or Costco, could double as a loaded-potato holder and would fit nicely on a plate with other foods and might help with guests' portion control.
Fruit salads, marinated vegetables, melon slices, frozen or gelatin salads would be my suggestion for side items for a warm weather meal.
