Recipe: Another Vanilla Extract Recipe

VANILLA EXTRACT

Commercial vanilla extract is dreadfully weak; this extract is excellent.

1/2 cup vodka or white tequila
2 whole vanilla beans

Put the vodka into a saucepan and heat it until it smokes but isn't
boiling. Break each of the vanilla beans into 4 pieces. Put these pieces
into a small sterile bottle or jar with a good lid. Fill the jar with the
hot liquor. Cover tightly. Shake frequently over the next week. At the end
of the week, strain the liquid into another sterile jar or bottle, using a
fine strainer or a coffee filter.
