Recipe(tried): Apple Banana Bran Muffins

G's Apple Banana Bran Muffins
Makes 12 muffins @ 120 calories each

3/4 cup white, all purpose flour
3/4 cup whole wheat flour
1/3 cup wheat bran
1/3 cup wheat germ
1 teaspoon baking powder
teaspoon baking soda
teaspoon salt
1 teaspoons cinnamon
3/4 cups brown sugar
1 egg
2 tablespoons vegetable oil
2 tablespoons plain, nonfat yogurt
1 cup unsweetened apple sauce
1 ripe banana, mashed

Preheat the oven to 350 degrees.
Spray a muffin pan with non-stick spray.
In a large bowl, whisk together the dry ingredients.
In a medium bowl, combine the eggs, oil and yogurt and beat to a froth.
Make a well in center of the dry ingredients and pour in the wet ingredients.
Gently mix until almost combined and add the applesauce and banana.
Stir just to combine.
Spoon into the prepared muffin cups, filling them almost full.
Sprinkle tops with wheat germ and cinnamon.
Bake until the muffins have risen slightly and are golden brown, 20-25 minutes.
Refrigerate leftovers.
