Recipe: Snow Muffins (1930's)

Breads - Muffins, Quick Breads
SNOW MUFFINS

In this recipe, the snow takes the place of eggs.

2 cups flour (or more)
1 cup brown sugar
3 teaspoons baking powder
1 teaspoon salt
3 teaspoons butter or shortening, melted
1 cup milk or water
1 1/2 cups clean white snow
3/4 cup raisins or currants (optional)

Mix flour, sugar, baking powder and salt. Add melted shortening or butter and milk; add snow and raisins (if desired).

Bake in greased muffin pans at 400 degrees F for 15 to 18 minutes or until light brown.
