APPLE CAKE
3 cups all-purpose flour
2 cups sugar
1 1/2 cups salad oil
2 eggs
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon double-acting baking powder
2 teaspoons vanilla extract
4 cups thinly sliced, peeled, cored Red or Golden Delicious apples
1 cup walnuts, chopped
Preheat oven to 375 degrees F.
Into large bowl, with spoon mix all ingredients except apples and walnuts. Stir in apples and walnuts until just blended. Spread batter evenly in 13 by 9-inch ungreased baking pan.
Bake 55 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on wire rack; cut into 3 x 3 1/4-inch pieces.
Makes 12 servings
