APPLE CHICKEN SALAD
1 medium Fuji apple
1 cup cooked boneless, skinless, diced chicken breast
2 tablespoons green pepper, chopped
2 tablespoons low-calorie mayonnaise
1 teaspoon chopped pimento
Small pinch rosemary, crushed
Dash lemon pepper
Salt (optional)
FOR SERVING:
Lettuce
1/2 cup alfalfa sprouts
Core and slice apple. Chop about 1/2 cup of the apple; combine with remaining ingredients except lettuce and sprouts.
On lettuce-lined plate, arrange remaining apple slices; top with alfalfa sprouts, then chicken salad.
Makes 2 servings
