CHINESE PASTA SALAD
FOR THE DRESSING:
2 tbsp sesame oil
2 tbsp lemon juice
1 tbsp fine chopped fresh ginger
1 chopped garlic clove
1 1/2 tsp salt
3 tsp vegetable oil
1 tsp red wine vinegar
1/2 tsp black pepper
FOR THE SALAD:
1 1/2 cups snow peas
9 oz rice vermicelli
red bell pepper, sliced thin
1/2 English cucumber, sliced thin
6 oz cooked shrimp
6 oz crabmeat
In a small bowl, combine the ingredients for the dressing. Set aside.
Wash and trim snow peas. Place them in a bowl and pour in enough boiling water to cover them. Let stand 10 minutes; drain and set aside.
Cook the noodles in plenty of boiling water for 3 to 4 minutes. Drain in colander, rinse with cold water and set aside.
In large bowl, combine noodles, snow peas, red pepper, cucumber, shrimp and crabmeat.
Pour this dressing over the other ingredients and mix thoroughly. Chill before serving.
Servings: 6
