Recipe: Holiday Waldorf Salad (apple, grapes and nuts, Jell-O recipe, 1980's)

"JELL-O Gelatin and fruit make this Waldorf wonderful."
2 packages (4-serving size) or 1 package (8-serving size) JELL-O Strawberry Flavor Gelatin
2 cups boiling water
1 tablespoon lemon juice
1 cup cold water
Ice cubes
1 medium red apple, diced
1/2 cup halved seedless grapes
1/2 cup thinly sliced celery
1/2 cup chopped walnuts
1 cup mayonnaise
FOR GARNISHING (optional):
Lettuce, apple slices and grapes
Dissolve gelatin in boiling water; add lemon juice. Combine 1 cup cold water and ice cubes to make 2 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Chill until thickened, about 10 minutes.
Fold in apple, grapes, celery and walnuts. Measure 1 cup and set aside.
Pour remaining gelatin into 8-cup bowl. Chill until set, but not firm.
Blend mayonnaise into reserved gelatin. Spoon over clear layer. Chill until set, about 3 hours.
Garnish with lettuce, apple slices and grapes, if desired.
Makes about 7 cups or 14 servings
