CHERRY CREEK GRILL'S MACHO SALAD

"I found the below recipe under Fairway Grill's Macho Salad. The recipe seems pretty close (to Cherry Creek Grill's Macho Salad). The Cherry Creek Grill is part of the Hillstone restaurant group. It operates under Houston's, Bandera, Palm Beach Grill...depending on what city you are in."

3 cups salad greens
1 cup roasted chicken or turkey
3/4 cup chopped tomatoes
1/2 cup diced avocado
8 pieces dates
5 to 6 cornbread croutons
4 oz Vinaigrette Dressing (recipe follows)
FOR THE GARNISHES:
goat cheese
blanched almonds
cracked black pepper

Toss the ingredients for the salad. Garnish with goat cheese blanched almonds, and cracked black pepper.

VINAIGRETTE DRESSING

1 cup lemon juice
1/2 cup spicy brown mustard
1/4 cup cider vinegar
1/4 cup minced fresh garlic
2 tbsp. brown sugar
2 tsp. kosher salt
1 tsp. black pepper
1 tsp. dried basil
1 tsp. dried oregano
1 quart plus 1 cup olive oil

Place all ingredients for the dressing except oil in a bowl. Whisk in oil to emulsify by hand. Keep chilled.

"Cherry Creek Grill, formally Bandera, has the same menu as Bandera but now serves lunch. They make a mean martini and have the best chicken, grilled artichoke, and Macho salad around! The Macho salad is named after a monkey in the Sacramento zoo where the Bandera restaurant there would send the leftovers from the day and Macho would not share the salad with any of the other monkeys at the zoo."
