APPLE-HERB JELLY
2 1/2 cups prepared apple juice
1/4 cup dried herb (such as tarragon, sage, thyme)*
1/4 cup white vinegar
4 cups sugar
few drops red or green food coloring (optional)
1 pouch (3 oz.) liquid pectin
Heat apple juice just to boiling. Pour over herbs and let stand 20 minutes.
Strain through 2 thicknesses of cheesecloth. Add vinegar and sugar. Bring to a full rolling boil, stirring frequently. Add coloring for desired appearance. Stir in liquid pectin and bring again to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat and skim.
Fill sterile jars, leaving 1/8-inch headspace. Wipe jar rims, adjust lids and rings. Process in a boiling water bath for 5 minutes.
*One recipe said to use 4 Tbsp. chopped fresh sage and add to the apple jelly once it is removed from the heat.
