Here is Grandma James' Tomato Jam as promised. Very good on peanut butter as well. Hope that this or one of the ones on Recipelink is what you are looking for. Judy
Tomato Jam-Dianne (maybe Grandma James')
2 lbs ripe tomatoes, peeled, ends and cores removed
1 tsp grated lemon peel (optional)
1/4 c lemon juice
6 c sugar
1 6oz bottle liquid fruit pectin
Cut the peeled tomatoes into small pieces and crush. In an 8-10 qt kettle, measure 3 c tomatoes. Simmer 10 minutes. Add peel and juice, stir in sugar. Bring mixture to a full rolling boil, stirring constantly. Boil hard uncovered, 1 minute. Remove from heat, stir in pectin. Skim off foam with a metal spoon. Pour at once into hot sterilized jars. Seal using hot water bath. Not sure how long as it used to be done with a parrafin seal but that is no longer sonsidered safe. Makes 7 half pint jars.
