Recipe(tried): Australian Pumpkin Soup (Family Favourite)

Phyllis, This is a recipe I use all the time,it is a family favorite.

Pumpkin Soup

750gr pumpkin (I choose a deep colour)
2 large onions
375gr potatoes
4 cups chicken stock (can use powder or liquid)
1 1/2 cups cream (can use Carnation milk or half and half)
salt and pepper

Peel pumpkin, cut into pieces, place in large saucepan, add onions, potatoes and chicken stock.
Bring to boil, reduce heat , simmer uncovered 25 mins.
Use hand blender until smooth, add cream and salt and pepper.
Bring to boil and simmer 5 mins.
Enjoy!!!
