BENJI'S DELI SPICY COLD SOBA NOODLES
1 pound fresh soba noodles
1/2 large red bell pepper, cut in julienne strips
3 ribs celery, sliced on a bias
3 green onions, sliced on a bias
2 tablespoons vegetable oil
2 tablespoons dark sesame oil
2 tablespoons red wine vinegar
2 tablespoons plus 2 teaspoons soy sauce
2 tablespoons plus 2 teaspoons granulated sugar
2 tablespoons plus 2 teaspoons Vietnamese chili paste (Sriarcha brand), or to taste
Cook soba noodles according to package directions. Rinse with cold water and drain completely.
Toss noodles in a large bowl with red bell pepper, celery and green onions; set aside.
Combine vegetable oil, sesame oil, vinegar, soy sauce, sugar and chili paste with a whisk. Pour over noodle mixture and toss until evenly coated. Chill until ready to serve.
Makes 6 to 8 servings
