BANANA BUTTERSCOTCH BREAD
1 stick (1/2 cup) butter, softened
2 eggs
3/4 cup sugar
Blend together.
3 ripe bananas mashed
2 cups flour
1 teaspoon baking powder
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg
3/4 cup Nestle butterscotch morsels
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F. Grease 2 loaf pans.
Mix together butter, eggs, and sugar. Stir in mashed bananas. Add flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Mix until just combined. Fold in butterscotch morsels and walnuts. Spread into prepared pans.
Bake 350 degrees for 28 minutes or until done, test with toothpick
VARIATION:
CHOCOLATE CHIP BANANA BREAD:
Omit cinnamon and nutmeg and substitute Nestle semi-sweet mini morsels to make Chocolate Chip Banana Bread.
