APPLE BRAN MUFFINS
1 cup flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup shortening
1 egg
1/2 cup Carnation Instant Nonfat Dry Milk crystals plus water to make 1 cup
1 cup finely chopped peeled tart apple
2 cups 40% bran flakes
Mix flour, sugar, baking powder, salt, cinnamon and nutmeg in large bowl. Cut in shortening until size of small peas. Add egg, liquid instant and apple to flour mixture. Mix until just blended. Fold in bran flakes. Fill 12 greased muffin tins.
Bake in hot oven (400 degree F) 25 minutes or until lightly browned.
Makes 12 muffins
