Recipe(tried): Bancheros Soup (copycat recipe)
SoupsI'm 61 years old. I had been going to Banchero's throughout my life.
BANCHERO'S SOUP
Please note, I don't have measurements, just the formula.
You will use:
Chicken stock
1 potato, diced it in little squares
1-2 carrots, cut in little squares too.
1 stalk celery, cut in small pieces
Barley (Now barley swells so don't pour a lot into it. Maybe in a 4 quart stock pot use 1/4 to 1/2 cup.)
Half of a can of tomato sauce (plain)
Small pasta*
Salt and ground black pepper
I start out with chicken stock in a sauce pan (4 or 8 quart). Bring chicken stock to a boil then add in the diced potato and carrots. Use maybe (1) stalk of celery. Next add barley. Let the barley cook for maybe 30-40 minutes or until the barley is tender.
Add the tomato sauce 1/2 of a small can (not to much). Now that the barley is tender, add the egg pastina. Cook until the pasta is done. Salt it to taste. Add some pepper too.
*You need to buy a very small pasta. I use egg pastina. It's a real small pasta like the size of a piece of rice, maybe a little smaller. Egg pastina is in most grocery stores. Any real small pasta will do. (I prefer the egg pastina).
That's about it. It's identical to Banchero's soup.
I always make garlic bread to go with it.
