Recipe(tried): Banana Walnut Bread Mini Loaves

I make this banana walnut bread, and it is great. One batch bakes 6 mini loafs, and I make several batches and give it away in gift baskets and also freeze several and pull it out of the freezer when ever we want. I just found a loaf that I froze last xmas and it was still tasty.

BANANA WALNUT BREAD

3 Cups flour
2 cups sugar
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
3 eggs
8 ounce can crushed pineapple drained
1 1/2 cups oil
2 cups mashed bananas
3/4 cup crushed walnuts

Mix all together in a large bowl with a big spoon and pour
into 6 greased mini loaf pans and bake for about 40-45 minutes at 350 degrees F.
