Kristin is out of school and is the Assistant Director of Rehab. at a hospital in a neighboring town. She received her BA from BAMA in 2003 and her Masters in 2005. She loves what she does and her dad and I are so proud!

I still try to cook a "Sunday Dinner" most Sundays, but there are many Sundays that it's just Rex and me and we may go out to eat. Yesterday I made taco salad and Terry's Strawberry Cobbler. Both were just yummy!

Tonight we are having barbecue pork sandwiches and oven potatoes. This is quick and is so easy to clean up the kitchen afterwards. The seniors at school cook Boston butts three or four times a year--during the fall and winter--and I ordered one from one of my school children. I am just going to cut it into bite-sized pieces, put a little chicken broth and chopped garlic on it, and warm it in the microwave. I'll let Rex and Krisin put barbecue sauce on the pork and then they can put it on the buns.

This is my recipe for "Oven Potatoes."

4-5 red potatoes, scrubbed and diced into bite-sized pieces
2 Tbsp. olive oil
1 tsp. onion powder
1 tsp. garlic powder
2 tsps. Italian seasoning

Preheat oven to 400 degrees F. Cover a large baking sheet with aluminum foil and spray with olive oil spray.

In a large bowl, put the diced potatoes, olive oil, onion powder, garlic powder, and Italian seasoning. Stir the potatoes around so that they are fully coated.

Place on aluminum covered baking sheet and bake for 30-40 minutes. After taking the potatoes out of the oven, sprinkle with some seasoned salt. I use Lawry's.

For dessert we will have some of Terry's Strawberry Cobbler that I made with Plant City strawberries.
