Recipe(tried): BBQ Beef Tostadas, Tomato/Cuke Salad, Yellow Rice and Black Beans

Hello Everyone!

I have made this dinner once before and tonight we will be enjoying once again. I am going to share the recipe with you because it's that delicious and best of all, it all can be made under 30 minutes!

Everything is store bought, the only things you chop are the onions, tomatoes and cukes, oh, and shred the cheese or buy it already shredded.

Here are the recipes!

Barbeque Beef Tostadas
recipe courtesy of Publix Aprons
serves 3-4

1 cup chopped purple onion
1 Tbsp. olive oil
16 oz. pkg. fully cooked BBQ beef or pork, shredded
(I bought Publix brand, Lloyd's makes a decent one too)
1 1/4 cups shredded cheddar or Mexican-blend cheese
Charra's Yellow Corn Tostadas

Preheat large saute pan on medium-high and drizzle with olive oil. Add chopped onion, cook 3 minutes or until onions begin to brown. Stir in the bbq meat and 1 cup cheese. Reduce heat to medium-low and simmer 4-5 minutes.

Assemble tostadas (3 to a person)by topping each with 1/4 c. meat mixture and 1 Tbsp. tomato/cuke salad. Sprinkle with shredded cheddar.

Yellow Rice - 5 oz. pkg of Vigo Yellow Rice
cook according to directions.

Black Beans - 15 oz. can of Kirby's Black Beans, heat up.
