BBQ WHOLE CHICKEN WITH SOUTHERN RUB
2 whole chickens (4 pounds each)
FOR THE SOUTHERN RUB:
2 tablespoons salt
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons ground cumin
1 tablespoon ancho chile powder
1 tablespoon pasilla chile powder
1 tablespoon freshly cracked black pepper
1 tablespoon cayenne pepper
4 tablespoons paprika
Mix all Southern Rub ingredients together well. Rub the chickens with the grill rub. Let sit in the refrigerator for 1 hour.
Prepare a wood or charcoal grill and let it burn down to embers.
On the grill place the chickens, on the side with no fire. Cover the grill and vent slightly. Cook for 3 hours or until chickens are cooked through.
