Recipe: Caribbean Jerk Chicken Breasts with Red Beans and Rice (baked or grilled in foil packets)

CARIBBEAN JERK CHICKEN BREASTS
WITH RED BEANS AND RICE


4 sheets (12x18-inches each) Reynolds Wrap Everyday Heavy Duty Aluminum Foil
2 cups cooked rice
1 can (16 oz.) red beans or light red kidney beans, rinsed and drained
1/2 cup Caribbean jerk marinade, divided
4 skinless, boneless chicken breast halves (1 to 1 1/4 pounds)

Preheat oven to 450 degrees F or preheat grill to medium-high.

Combine rice, beans and 1/4 cup marinade. Center one-fourth of mixture on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Top with chicken; drizzle with remaining marinade.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

Bake 20 to 24 minutes on a cookie sheet in oven OR Grill 16 to 20 minutes in covered grill.
