Recipe(tried): Berry Grunt

Desserts - Fruit
My Father's intended has blackberry bushes in her yard and shared her bounty with me yesterday. They are gorgeous berries. After eating bunches yesterday I turned the rest into Berry Grunt and Berry Crisp this morning. Here's the Grunt recipe.

Berry Grunt
(adapted from 1001 Low Fat Recipes)

3 cups fresh blackberries
1 cup water
1/2 cup plus 2 Tablespoons granulated sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup buttermilk (I used fat-free milk soured with lemon juice since I didn't have any low-fat buttermilk)

Stir berries, water and sugar together in saucepan. Simmer 5 minutes, stirring often.

Meanwhile, combine flour, baking powder, nutmeg and salt. Blend in buttermilk; do not overmix. Drop batter over berries, making 8 dumplings.

Cover and simmer 8 to 10 minutes.

I poured fat-free milk over mine.
