Bertie's Brown Beans
I haven't seen much posted about beans so I thought I'd tell you how mom fixed them. She did at ninety-five and since this is mom's day I thought you'd like her recipe. She cooked beans just about everyday I can remember, of course there was nine of us - seven boys and two girls, so if you had beans you'd never go hungry. She put them on to cook every morning and sometimes she'd add onion, garlic, or chili powder, or ham and onion and sometime she'd add whole potatoes. She'd put cut up biscuits and of course salt and pepper. Mom would always fry potatoes and have a meat loaf with it. As you can tell we never went hungry. At Christmas we always had to eat bacon, eggs, sausage, and gravy before we opened gifts.. I now know how lucky we all were to have her...so if you try her beans think of Bertie and they'll be good. The only way in a big family to make them is lots of them, you could cut the recipe in half.
Bertie's Baked Beans
Get a large bowl and two (28 oz) cans of pork and beans (drain the liquid off). Put in bowl add:
1 onion, chopped
1 bottle of catsup
bacon (about four slices cut up)
some liquid smoke (about 1 tablespoon)
1/2 pound brown sugar
salt and pepper.
I sometimes put in some BBQ sauce if I have it. Let the liquid cover the beans well. Bake about one and one half hours. Put foil on awhile and then take off. Put slices of bacon on top before putting in oven and you can kinda tell by how done the beans done are by the bacon. Hope you enjoy.. joy in mo
