Black-Eyed Pea's Cheese Broccoli Soup
I've posted this recipe before, it's from a local restaurant called "Black-Eyed Pea". My daughter has made it and it really is delicious.

Makes 10 (1 cup) servings

1 1/2 pounds fresh broccoli
1 pint half-and-half
2 cups water
1 pound pasteurized process cheese spread loaf, cut into cubes (Velvetta)
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup cornstarch mixed with 1 cup cold water

Steam broccoli until tender (microwave on high 6 minutes per pound with florets turned toward center of dish) (my daughter boiled the broccoli). Combine half-and-half and water in top of a double boiler over simmering water. Add cheese, salt and pepper. Heat until cheese is melted. Stir in broccoli.

Stir dissolved cornstarch into cheese mixture and heat until soup thickens.
