Recipe: Boiled Cake

Jennie, I think this might be what you are looking for. It is also called War Cake, as in WW1. I think my grandmother made this cake. I would think lard would have been the shortening of choice back then.

Boiled Cake

2 cups all purpose or whole wheat flour
1/4 teaspoon soda
2 teaspoons baking powder
1/2 cup shortening
1 teaspoon cinnamon
1 teaspoon ginger or cloves or a mixture
1 cup raisins or prunes, chopped
1 cup white or brown sugar
1 cup water

Grease a loaf pan.
Sift flour, soda and baking powder together and set aside. Place all other ingredients in a saucepan and bring to a boil, cook for 5 minutes.
Cool completely. Add the sifted dry ingredients and mix well. place in prepared pan and bake in a 325-350 degree oven for about 45 minutes, or until done.
