Recipe(tried): boiled patty cakes

these are delicious and you don't need to make a whole large cake.

Boiled Patty Cakes.

Boil together : 3 / 4 cup sugar, 3 / 4 cup water, 3 / 4 cup sultanas, pinch salt, 4 oz butter, 1 / 2 teaspoon baking soda, 1 teaspoon mixed spice, 1 tablespoon golden syrup. When sugar has dissolved, allow to cool.

Add : 1 egg, 3 / 4 cup plain flour, 3 / 4 cup self-raising flour. Stir until combined.

Spoon mixture into patty paper pans (or you can make muffin sized cakes). Bake at 450F in top of oven approximately 12 minutes.

I like to ice these with icing make with butter, vanilla and icing sugar, combined with some milk.
