Recipe(tried): The Queen Victoria Inn's Koffee Kuchen (streusel-topped coffee cake)
Breakfast and BrunchTHE QUEEN VICTORIA INN'S KOFFEE KUCHEN
FOR THE KUCHEN:
1 cup white granulated sugar
1/2 cup (1 stick) butter, softened
2 eggs, separated
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup milk
FOR THE TOPPING:
6 tablespoons all-purpose flour
1/4 cup firmly packed brown sugar
2 tablespoons butter
1/2 teaspoon baking powder
Heat oven to 350 degrees F. Butter 12x8-inch (2-quart) baking dish.
In large bowl, beat white sugar and 1/2 cup butter until well blended. Add egg yolks; beat well.
Sift together 1 1/2 cups flour and 1/2 teaspoon baking powder; add to butter mixture alternately with milk.
In small bowl, beat egg whites until stiff; fold gently into batter. Spread batter evenly in buttered dish.
In small bowl, combine all topping ingredients; mix until coarse crumbs form. Sprinkle evenly over batter.
Bake at 350 degrees F for 28 to 32 minutes or until toothpick inserted in center comes out clean. Cut into squares; serve warm.
