Recipe: Boston Market-Style Chicken Marinade, Boston Market Squash

CHICKEN (LIKE BOSTON MARKET)
Serves 4

1/4 cup canola oil
1 tbsp honey
1 tbsp lime juice
1/4 tsp paprika
4 chicken breast halves, washed and patted dry

Preheat oven to 400 degrees F.

In a small bowl, combine canola oil, honey, lime juice and paprika.

Place chicken, skin side up, in a 7x11 inch baking dish. Apply mixture to chicken pieces in a single layer.

Bake in oven for 35-40 minutes, basting every 8-10 minutes or until well browned and juices run clear when you cut into the thickest part of chicken. Remove from oven. Cover with foil for 15 minutes. This softens chicken and keeps it hot until served.

I don't know about the yams, but here is their squash recipe:


SQUASH (LIKE BOSTON MARKET)

2 butternut squash; halved long, remove seeds
Margarine or butter
Salt
1/2 cup brown sugar; packed
1/2 cup honey
1/2 tsp ground ginger
1 tsp pumpkin pie spices
4 tbsp butter or margarine; melted

Preheat oven to 400 degrees F.

Place squash cut-side down on Pam-sprayed shallow baking pan.

Bake uncovered about 45 minutes or until fork tender. Wipe cut surface with a little butter and sprinkle with salt. Return to bake cut-side up about 10 minutes longer or until browned and soft.

Scrape out the meat into a mixing bowl. Add sugar, honey, ginger, pumpie pie spice and butter. Beat with electric mixer at med speed until smooth.

Return to oven, ocvered in foil, just to keep warm until time to serve, 325 for 30 minutes.
