Recipe: Braciole

In My family we make braciole like this. Flatten a flank steak and slice thru to make several peices of meat. Saute a small green pepper and small onion,then add italian bread crumbs,grated cheese,and raisins.(Raisins come from the Sicilian) put into flatten meat and roll up and secure with tootpicks,brown and add to the sauce.
This is how my mother always made it and so do i. Other meats are dry and i find the flank steak the best to use.
Unless you want to make pork ones which i use the same filling for.

On food network i saw them make them with Italian sausage as the filling. Just take out of the casing and fill the meat and roll up. I have never tried this,but i think it would be good also.
